It contains glucosinolates, which the body can convert into substances that fight cancer. Broccoli’s cancer fighting properties are thought to be strongest in the young new shoots. Cutting them at the microgreen size is thought to boost the supporting chemicals.
Broccoli is thought to help lower cholesterol, maintain proper blood pressure and promote cardiovascular health. It’s high vitamin A and antioxidant levels help promote eye health and prevention of macular degeneration and cataracts.
Compounds in broccoli help to regulate the immune response and reduce excessive inflammation. They promote collagen production, iron absorption and wound healing.
Broccoli is also an excellent source of calcium and vitamin K for healthy bones. It promotes the growth of good intestinal microbes and facilitates a healthy gut and regular bowel movements.
