Daikon (white radish) Raphanus sativus var. longipinnatus is a nutrient dense food and medicinal herb. It’s rich in calcium, magnesium, potassium, copper, vitamin C and folate.
Both the white root and the greens are edible, with the greens being especially rich in iron. The whole plant is a powerful antioxidant. Eat raw, and immediately after grating, for maximum benefit of its active enzymes and isothiocyanates. Raw daikon contains digestive enzymes like amylase and lipase, which help break down carbohydrates and fats.
